Coffee-Infused Pot Roast with a Coffee Sauce

Ingredients:
- 3 lb pot roast
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 teaspoons paprika
- 1 teaspoon oregano
- 2 cups beef broth
- 1/2 cup brewed coffee
- 1 tablespoon Worcestershire sauce
- 2 tablespoons tomato paste
- 2 tablespoons cornstarch
- 1/4 cup cold water
Directions:
- Preheat the oven to 350°F.
- Season the pot roast with salt and pepper.
- Heat the olive oil in a large oven-safe pot over medium-high heat. Add the pot roast to the pot and brown on all sides. Remove from heat.
- Add the onion, garlic, paprika, and oregano to the pot. Cook until the onion is softened. Add the beef broth, coffee, and Worcestershire sauce. Bring to a boil.
- Cover the pot and place in the preheated oven. Cook for 2 hours.
- Remove the pot from the oven and stir in the tomato paste. Combine the cornstarch and cold water in a small bowl and stir into the pot. Place the pot back in the oven and cook for an additional 15 minutes.
- Serve the pot roast with the coffee sauce.
