Cream Cheese-Filled Banana Bread

Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mashed ripe banana
- 1/2 cup buttermilk
- 8 ounces cream cheese, at room temperature
- 1/4 cup granulated sugar
- 1 large egg yolk
Directions:
- Preheat oven to 350 degrees F. Grease a 9×5-inch loaf pan with butter or cooking spray; set aside.
- In a medium bowl, whisk together the flour, baking soda, and salt; set aside.
- In a large bowl, use an electric mixer to cream together the butter and sugar until light and fluffy. Add in the eggs, one at a time, and mix until fully incorporated. Add in the vanilla and mashed banana and mix until combined.
- Add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined; set aside.
- In a medium bowl, use an electric mixer to beat together the cream cheese, sugar, and egg yolk until smooth and creamy. Spread the cream cheese mixture into the bottom of the prepared loaf pan.
- Pour the banana bread batter over the cream cheese layer and spread evenly. Bake for 50-60 minutes, or until a knife inserted into the center of the loaf comes out clean.
