Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons cocoa powder
  • 1 cup butter, melted
  • 1 1/2 cups light brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons red food coloring
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar

Directions:

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cocoa powder. Set aside.
  3. In a large bowl, cream together melted butter and sugars until light and fluffy. Beat in eggs, one at a time, followed by vanilla and red food coloring.
  4. Gradually add in the dry ingredients, mixing until just combined.
  5. In a separate bowl, beat together cream cheese and powdered sugar until smooth.
  6. Scoop 1 tablespoon of cookie dough, flatten it slightly, and place 1 teaspoon of cream cheese mixture in the center. Top with another tablespoon of cookie dough, and seal the edges by pressing lightly.
  7. Place cookies on prepared baking sheets and bake for 10-12 minutes. Let cool before serving.
