Cream Cheese-Filled Red Velvet Cookies

Ingredients:
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 tablespoons cocoa powder
- 1 cup butter, melted
- 1 1/2 cups light brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 tablespoons red food coloring
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
Directions:
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cocoa powder. Set aside.
- In a large bowl, cream together melted butter and sugars until light and fluffy. Beat in eggs, one at a time, followed by vanilla and red food coloring.
- Gradually add in the dry ingredients, mixing until just combined.
- In a separate bowl, beat together cream cheese and powdered sugar until smooth.
- Scoop 1 tablespoon of cookie dough, flatten it slightly, and place 1 teaspoon of cream cheese mixture in the center. Top with another tablespoon of cookie dough, and seal the edges by pressing lightly.
- Place cookies on prepared baking sheets and bake for 10-12 minutes. Let cool before serving.
