Creamy Celeriac Soup with Apple and Walnut Relish

This creamy celeriac soup with apple and walnut relish is a delicious and healthy vegetarian soup that is easy to make. The combination of the creamy celeriac, sweet apples, and crunchy walnuts makes for a unique and flavorful soup that will satisfy all of your taste buds.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 celery stalks, diced
  • 2 large potatoes, peeled and diced
  • 2 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 2 cups celeriac, peeled and diced
  • 1/2 cup half and half
  • Salt and pepper, to taste
  • 1 apple, diced
  • 1/4 cup walnuts, chopped

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and celery and cook until softened, about 5 minutes.
  2. Add the potatoes, vegetable broth, thyme, oregano, and nutmeg and bring to a boil. Reduce the heat to low and simmer for 10-15 minutes, until the potatoes are tender.
  3. Add the lemon juice, celeriac, and half and half. Simmer for an additional 10-15 minutes, until the celeriac is tender.
  4. Using an immersion blender, blend the soup until creamy.
  5. Season with salt and pepper, to taste.
  6. In a small bowl, combine the diced apples and walnuts.
  7. Serve the soup with the apple and walnut relish. Enjoy!
