Creamy Celeriac Soup with Apple and Walnut Relish
This creamy celeriac soup with apple and walnut relish is a delicious and healthy vegetarian soup that is easy to make. The combination of the creamy celeriac, sweet apples, and crunchy walnuts makes for a unique and flavorful soup that will satisfy all of your taste buds.
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 celery stalks, diced
- 2 large potatoes, peeled and diced
- 2 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon nutmeg
- 1 tablespoon lemon juice
- 2 cups celeriac, peeled and diced
- 1/2 cup half and half
- Salt and pepper, to taste
- 1 apple, diced
- 1/4 cup walnuts, chopped
Directions:
- Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and celery and cook until softened, about 5 minutes.
- Add the potatoes, vegetable broth, thyme, oregano, and nutmeg and bring to a boil. Reduce the heat to low and simmer for 10-15 minutes, until the potatoes are tender.
- Add the lemon juice, celeriac, and half and half. Simmer for an additional 10-15 minutes, until the celeriac is tender.
- Using an immersion blender, blend the soup until creamy.
- Season with salt and pepper, to taste.
- In a small bowl, combine the diced apples and walnuts.
- Serve the soup with the apple and walnut relish. Enjoy!
