Creamy Curried Cauliflower and Apple Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 large head cauliflower, chopped into small florets
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon smoked paprika
  • 2 apples, peeled, cored, and diced
  • 4 cups vegetable broth
  • 1/4 cup coconut cream
  • Salt and pepper, to taste

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cauliflower, curry powder, cumin, coriander, turmeric, cinnamon, ginger, and smoked paprika and cook, stirring, until the spices are fragrant, about 3 minutes.
  3. Add the apples and vegetable broth and bring to a simmer. Cook until the cauliflower is tender, about 10 minutes.
  4. Remove the pot from the heat and use an immersion blender to blend the soup until smooth.
  5. Stir in the coconut cream and season with salt and pepper to taste.
  6. Return the pot to the heat and cook for another 5 minutes to heat the soup through.
  7. Serve the soup hot.
