Creamy Curried Cauliflower and Apple Soup

Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 large head cauliflower, chopped into small florets
- 1 teaspoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon smoked paprika
- 2 apples, peeled, cored, and diced
- 4 cups vegetable broth
- 1/4 cup coconut cream
- Salt and pepper, to taste
Directions:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the cauliflower, curry powder, cumin, coriander, turmeric, cinnamon, ginger, and smoked paprika and cook, stirring, until the spices are fragrant, about 3 minutes.
- Add the apples and vegetable broth and bring to a simmer. Cook until the cauliflower is tender, about 10 minutes.
- Remove the pot from the heat and use an immersion blender to blend the soup until smooth.
- Stir in the coconut cream and season with salt and pepper to taste.
- Return the pot to the heat and cook for another 5 minutes to heat the soup through.
- Serve the soup hot.
