Creamy Duck and Mushroom Pie

Ingredients:
- 1 sheet store-bought puff pastry
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 1 cup cooked, shredded duck meat
- 1/4 cup all-purpose flour
- 2 cups chicken stock
- 1/2 cup heavy cream
- 1 teaspoon fresh thyme, chopped
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
Directions:
- Preheat oven to 400°F (200°C). Grease a 9-inch (23-cm) pie dish with butter or oil.
- Roll out the puff pastry and place it over the pie dish. Trim off any excess pastry and use a fork to prick the bottom and sides.
- Bake in the oven for 10 minutes, or until the pastry is lightly golden.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened. Add the mushrooms and cook until golden.
