Ingredients:

  • 1 sheet store-bought puff pastry
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 1 cup cooked, shredded duck meat
  • 1/4 cup all-purpose flour
  • 2 cups chicken stock
  • 1/2 cup heavy cream
  • 1 teaspoon fresh thyme, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Directions:

  1. Preheat oven to 400°F (200°C). Grease a 9-inch (23-cm) pie dish with butter or oil.
  2. Roll out the puff pastry and place it over the pie dish. Trim off any excess pastry and use a fork to prick the bottom and sides.
  3. Bake in the oven for 10 minutes, or until the pastry is lightly golden.
  4. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened. Add the mushrooms and cook until golden.
  5. Add the duck meat and cook for 2-3 minutes. Sprinkle the flour over the top and stir to combine. Pour in the chicken stock and cream and bring to a simmer. Add the thyme and season with salt and pepper, to taste.
  6. Pour the filling into the prepared pastry shell and top with the grated Parmesan cheese.
  7. Bake in the preheated oven for 30-35 minutes, or until the pastry is golden and the filling is bubbling. Allow to cool before serving.
