Creamy Sweet Potato Curry

This Creamy Sweet Potato Curry is a delicious and healthy vegetarian meal that is easy to make and gluten free. It is packed with flavour and is sure to become a family favourite.

Ingredients:

  • 3 sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1 can (14.5 ounces) light coconut milk
  • 1/2 cup vegetable broth
  • 1/4 cup chopped fresh cilantro

Directions:

  1. Heat the olive oil in a large saucepan over medium-high heat. Add the onion and garlic and cook for 3-4 minutes until softened.
  2. Add the curry powder, cumin, ginger, turmeric, salt and pepper and stir for 1 minute.
  3. Add the sweet potatoes and stir to coat. Pour in the coconut milk and vegetable broth and bring to a simmer.
  4. Reduce the heat to medium-low, cover and simmer for 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
  5. Uncover and cook for an additional 5 minutes to thicken the sauce.
  6. Garnish with cilantro and serve over steamed rice.
