Creamy Sweet Potato Curry
This Creamy Sweet Potato Curry is a delicious and healthy vegetarian meal that is easy to make and gluten free. It is packed with flavour and is sure to become a family favourite.
Ingredients:
- 3 sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 teaspoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 1/2 teaspoon ground turmeric
- 1 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1 can (14.5 ounces) light coconut milk
- 1/2 cup vegetable broth
- 1/4 cup chopped fresh cilantro
Directions:
- Heat the olive oil in a large saucepan over medium-high heat. Add the onion and garlic and cook for 3-4 minutes until softened.
- Add the curry powder, cumin, ginger, turmeric, salt and pepper and stir for 1 minute.
- Add the sweet potatoes and stir to coat. Pour in the coconut milk and vegetable broth and bring to a simmer.
- Reduce the heat to medium-low, cover and simmer for 15-20 minutes, stirring occasionally, until the sweet potatoes are tender.
- Uncover and cook for an additional 5 minutes to thicken the sauce.
- Garnish with cilantro and serve over steamed rice.
