Ingredients:

  • 1 lb. elbow macaroni
  • 1 cup raw cashews, soaked in water for 2 hours
  • 2 tbsp nutritional yeast
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • 2 cups water
  • Salt and pepper to taste

Instructions:

  1. Cook the macaroni according to package directions, then drain and set aside.
  2. In a blender, combine the soaked cashews, nutritional yeast, tahini, lemon juice, garlic powder, and water. Blend until smooth.
  3. In a large saucepan, heat the cashew sauce over medium heat.
