This delicious Crispy-Creamy Paris-Brest Pastry is a classic French dessert that is sure to impress. It’s made with choux pastry, filled with a light and creamy mousseline cream, and topped with chopped almonds for a crunchy finish.
Ingredients:
– 2 cups all-purpose flour
– 1 cup water
– 1/2 cup butter
– 4 eggs
– 2 cups milk
– 2 tablespoons sugar
– 2 tablespoons vanilla extract
– 1/2 teaspoon salt
– 2 cups heavy cream
– 1/2 cup confectioners’ sugar
– 1/2 cup chopped almonds
Directions:
1. Preheat oven to 375°F.
2. In a medium saucepan, combine flour and water over medium heat. Stir constantly until mixture thickens and forms a dough. Add butter and stir until fully incorporated.
3. Remove from heat and transfer dough to a large bowl. Let cool for 10 minutes.
4. Beat in eggs, one at a time, until fully combined.
5. Line a baking sheet with parchment paper and spoon dough into small mounds, about 1-2 inches in diameter.
6. Bake for 25 minutes, or until golden brown. Let cool completely.
7. In a medium saucepan, combine milk, sugar, vanilla extract, and salt. Bring to a simmer and cook for 5 minutes.
8. In a separate bowl, beat heavy cream and confectioners’ sugar until soft peaks form. Fold into milk mixture and stir until combined.
9. Spread cream onto cooled pastries and top with chopped almonds. Serve immediately.
