This delicious crispy duck confit recipe is sure to be a hit at your next dinner party. The duck is cooked in its own fat, creating a succulent and flavourful meal. The duck is then served with a side of fragrant potatoes and a tangy sauce to bring the dish together.
Ingredients:
- 2 duck legs
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 tablespoon of duck fat
- 2 cloves of garlic, minced
- 1 onion, diced
- 1/2 cup of white wine
- 2 tablespoons of chopped fresh parsley
- 3 potatoes, peeled and cut into wedges
- 2 tablespoons of butter
- 1/4 cup of sour cream
- 2 tablespoons of Dijon mustard
Directions:
- Preheat oven to 375°F.
- Season duck legs with salt and pepper and place in a large baking dish.
- Heat duck fat in a large skillet over medium heat. Add garlic and onion and cook until softened, about 5 minutes.
- Add white wine and simmer for 5 minutes. Add parsley and pour mixture over duck legs.
- Bake for 40 minutes, until duck is golden and cooked through.
- Meanwhile, place potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 10 minutes. Drain and return to the pot.
- Melt butter in the pot and season potatoes with salt and pepper. Mash the potatoes until desired consistency is reached.
- In a small bowl, mix together sour cream, mustard, and 1 tablespoon of the cooking liquid from the duck. Serve alongside mashed potatoes.
