Ingredients:
- 1 store-bought pizza dough
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 eggplant, chopped
- 1 can diced tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/4 cup vegan cheese, shredded
- Salt and pepper, to taste
Directions:
- Preheat oven to 375°F (190°C).
- Roll out the pizza dough on a lightly floured surface into a thin circle. Place on a parchment-lined baking sheet and set aside.
- In a large skillet over medium heat, add the onion, garlic, bell pepper, zucchini, and eggplant. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
- Add in the diced tomatoes, olive oil, oregano, and basil. Simmer for 10 minutes.
- Spread the ratatouille mixture over the pizza dough. Sprinkle with the vegan cheese.
- Bake for 20 minutes, or until the crust is golden brown and the cheese is melted.
