Crockpot Beef Stroganoff with Thyme
This Crockpot Beef Stroganoff with Thyme is the perfect comfort food for any occasion. It’s easy to make, and will fill your home with the mouth-watering aromas of tender beef, mushrooms, and herbs. The slow-cooked flavors of the beef, combined with the savory broth, and the hint of fresh thyme will make a delicious and healthy dinner your whole family will love.
Ingredients:
- 2 pounds of beef chuck roast, cut into cubes
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of tomato paste
- 1/2 teaspoon of sea salt
- 1/2 teaspoon of freshly ground black pepper
- 1 cup of beef stock
- 1 tablespoon of Worcestershire sauce
- 1/2 teaspoon of dried thyme
- 3 tablespoons of butter
- 1/2 pound of white mushrooms, sliced
- 3 tablespoons of all-purpose flour
- 1/4 cup of half-and-half
- 1/4 cup of sour cream
- 1/4 cup of fresh parsley, chopped
Directions:
- In a large bowl, combine the beef cubes, onion, garlic, tomato paste, sea salt, and black pepper. Mix until all the ingredients are evenly distributed.
- In the slow cooker, add the beef mixture, beef stock, Worcestershire sauce, and dried thyme. Cover and cook on Low heat for 6-8 hours.
- In a large skillet, melt the butter over medium heat. Add the mushrooms and cook for 5 minutes, or until the mushrooms are tender.
- In a small bowl, combine the flour and half-and-half. Stir until smooth. Add the mixture to the mushrooms and stir until the sauce thickens.
- Stir in the sour cream and parsley. Add the mushroom mixture to the slow cooker and stir to combine.
- Cover and cook for an additional 15 minutes, or until the sauce is thick and creamy.
- Serve over cooked egg noodles or mashed potatoes and enjoy!
