Recipe: Cumin-Spiced Ratatouille and Chickpea Soup

This delicious meal combines the flavors of cumin-spiced ratatouille and chickpea soup for a flavorful and healthy dinner. Make this vegan meal to enjoy all the flavors of ratatouille without any of the animal products.

Ingredients:

  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 eggplant, diced
  • 3 cloves garlic, minced
  • 2 teaspoons cumin
  • 1 can diced tomatoes
  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, bell pepper, zucchini, eggplant and garlic. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  2. Add the cumin and cook for 1 minute, stirring constantly.
  3. Add the diced tomatoes, chickpeas, vegetable broth, oregano, and salt and pepper. Bring the mixture to a boil, then reduce the heat to low.
  4. Simmer until the vegetables are soft and the flavors have blended, about 30 minutes.
  5. Taste and adjust the seasoning if needed.
  6. Serve the ratatouille and chickpea soup hot with crusty bread or over cooked grains.
