Recipe: Cumin-Spiced Ratatouille and Chickpea Soup
This delicious meal combines the flavors of cumin-spiced ratatouille and chickpea soup for a flavorful and healthy dinner. Make this vegan meal to enjoy all the flavors of ratatouille without any of the animal products.
Ingredients:
- 1 onion, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 eggplant, diced
- 3 cloves garlic, minced
- 2 teaspoons cumin
- 1 can diced tomatoes
- 1 can chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Directions:
- Heat the olive oil in a large pot over medium heat. Add the onion, bell pepper, zucchini, eggplant and garlic. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Add the cumin and cook for 1 minute, stirring constantly.
- Add the diced tomatoes, chickpeas, vegetable broth, oregano, and salt and pepper. Bring the mixture to a boil, then reduce the heat to low.
- Simmer until the vegetables are soft and the flavors have blended, about 30 minutes.
- Taste and adjust the seasoning if needed.
- Serve the ratatouille and chickpea soup hot with crusty bread or over cooked grains.
