Dark Chocolate Chunk Espresso Cookies
These Dark Chocolate Chunk Espresso Cookies are loaded with rich dark chocolate chunks and espresso flavor. They are a delicious treat that is sure to satisfy any sweet tooth.
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter, softened
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 tablespoons instant espresso powder
- 2 cups dark chocolate chunks
Directions:
- Preheat oven to 375 degrees F (190 degrees C).
- In a medium bowl, sift together the flour, baking powder, baking soda and salt; set aside.
- In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and espresso powder. Gradually stir in the sifted ingredients until just blended.
- Fold in the dark chocolate chunks.
- Drop dough by rounded spoonfuls onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, until golden brown. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
