Dark Chocolate Chunk Espresso Cookies

These Dark Chocolate Chunk Espresso Cookies are loaded with rich dark chocolate chunks and espresso flavor. They are a delicious treat that is sure to satisfy any sweet tooth.

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons instant espresso powder
  • 2 cups dark chocolate chunks

Directions:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium bowl, sift together the flour, baking powder, baking soda and salt; set aside.
  3. In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and espresso powder. Gradually stir in the sifted ingredients until just blended.
  4. Fold in the dark chocolate chunks.
  5. Drop dough by rounded spoonfuls onto ungreased cookie sheets.
  6. Bake for 8 to 10 minutes in the preheated oven, until golden brown. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
