Decadent Banana Cupcakes with Dulce de Leche Frosting

Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 1 cup mashed ripe banana
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1/2 cup dulce de leche
- 1/2 cup butter, softened
- 3 cups confectioners’ sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 12 muffin cups, or line with paper liners.
- In a medium bowl, sift together the flour, baking powder, baking soda, cinnamon and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the mashed banana and vanilla. Beat in the flour mixture alternately with the buttermilk.
- Fill the prepared muffin cups about 3/4 full. Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- To make the frosting, cream together the dulce de leche and butter until smooth. Gradually beat in the confectioners’ sugar, milk and vanilla until light and fluffy. Spread over cooled cupcakes.
- Store cupcakes in an airtight container in the refrigerator.
