Ingredients:
- 1 cup butter, softened
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon freshly grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1/3 cup granulated sugar, for rolling
Directions:
- Preheat oven to 350 degrees F and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, using a hand mixer, cream together the butter, granulated sugar, and brown sugar until light and creamy. Beat in the eggs, one at a time, then add in the vanilla extract, lemon zest, and lemon juice.
