4. In a separate bowl, whisk together 1/4 cup maple syrup, 2 tablespoons melted coconut oil, and 1 teaspoon vanilla extract.
5. Pour wet ingredients into dry ingredients and mix until everything is combined.
6. Drop spoonfuls of the mixture onto the baking sheet and spread out evenly.
7. Bake for 12-14 minutes or until lightly golden brown.
