Deliciously Decadent – Pumpkin Cake with Cream Cheese Frosting
This pumpkin cake is sure to tantalize all your taste buds! Made with a moist pumpkin cake base and an irresistibly creamy cream cheese frosting, this dessert is sure to be a hit.
Ingredients:
-3 1/2 cups all-purpose flour
-2 teaspoons baking powder
-1 teaspoon baking soda
-1 teaspoon salt
-1 teaspoon ground cinnamon
-1 teaspoon ground nutmeg
-1/2 teaspoon ground ginger
-1/2 teaspoon ground cloves
-1 cup vegetable oil
-2 cups white sugar
-4 eggs
-2 teaspoons vanilla extract
-2 cups pumpkin puree
-For the frosting:
-1 (8 ounce) package cream cheese
-1/2 cup butter, softened
-3 cups confectioners’ sugar
-1 teaspoon vanilla extract
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger and cloves.
3. In a large bowl, mix together the oil, sugar, eggs, 2 teaspoons vanilla extract and pumpkin puree. Add the flour mixture to the wet ingredients and mix until just combined.
4. Divide the batter evenly between the two prepared pans.
5. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
6. To make the frosting: In a medium bowl, beat the cream cheese and butter until light and fluffy. Beat in the confectioners’ sugar and 1 teaspoon vanilla extract until the frosting is smooth and spreadable.
7. Spread the frosting over the cooled cake. Enjoy!
