Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 2 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Directions:

  1. Preheat oven to 350F (180C). Grease a 9×5 inch loaf pan and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar together until light and fluffy. Beat in the eggs one at a time, then stir in the mashed bananas and vanilla.
  4. Gradually mix in the dry ingredients until just combined. Fold in the walnuts.
  5. Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
