Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 eggs
- 2 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
Directions:
- Preheat oven to 350F (180C). Grease a 9×5 inch loaf pan and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the butter and sugar together until light and fluffy. Beat in the eggs one at a time, then stir in the mashed bananas and vanilla.
- Gradually mix in the dry ingredients until just combined. Fold in the walnuts.
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
