Easy Chicken Piccata is a delicious, Italian-inspired weeknight meal that’s quick and easy to make. This dish is made with thinly sliced chicken breasts cooked in a rich white wine sauce, and topped with a bright, lemony caper sauce. The combination of flavors makes this dish a favorite for both kids and adults alike!
Ingredients:
- 2 boneless, skinless chicken breasts, thinly sliced
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup white wine
- 1/4 cup chicken broth
- 3 tablespoons capers, drained
- 2 tablespoons lemon juice
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped
Directions:
- In a shallow bowl, combine the flour, salt, and pepper. Add the chicken slices and coat with the flour mixture.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 3-4 minutes per side, or until cooked through. Remove the chicken from the skillet.
- Add the wine, chicken broth, capers, and lemon juice to the skillet. Bring to a boil, stirring to scrape up any browned bits from the bottom of the pan. Reduce the heat and simmer for 3-4 minutes.
- Add the butter and stir until melted. Return the chicken to the skillet and cook for 1-2 minutes, until heated through.
- Remove the skillet from the heat and stir in the parsley. Serve the chicken with the sauce spooned over the top.
