Ingredients:

  • 1 pound elbow macaroni
  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 3 cups milk
  • 2 cups feta cheese, crumbled
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 cups fresh spinach, chopped
  • 1/2 cup Parmesan cheese, grated

Directions:

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  2. Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook until al dente, about 8 minutes. Drain and set aside.
  3. In a large skillet over medium heat, heat the olive oil. Add the onion and garlic and cook until softened, about 5 minutes.
  4. Sprinkle the flour over the onion and garlic and stir to combine. Cook for 1 minute, stirring constantly.
  5. Slowly add the milk, whisking constantly to avoid lumps. Bring to a simmer and cook until thickened, about 5 minutes.
  6. Remove from the heat and stir in the feta cheese, salt, and pepper. Add the spinach and macaroni and stir until combined.
  7. Pour the mixture into the prepared baking dish. Sprinkle with the Parmesan cheese. Bake in the preheated oven for 25 minutes, or until golden brown and bubbly.
  8. Serve hot.
