Feta and Spinach Macaroni and Cheese (Greek-Style)

Ingredients:
- 1 pound elbow macaroni
- 2 tablespoons olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 3 cups milk
- 2 cups feta cheese, crumbled
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups fresh spinach, chopped
- 1/2 cup Parmesan cheese, grated
Directions:
- Preheat oven to 350°F. Grease a 9×13-inch baking dish.
- Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook until al dente, about 8 minutes. Drain and set aside.
- In a large skillet over medium heat, heat the olive oil. Add the onion and garlic and cook until softened, about 5 minutes.
- Sprinkle the flour over the onion and garlic and stir to combine. Cook for 1 minute, stirring constantly.
- Slowly add the milk, whisking constantly to avoid lumps. Bring to a simmer and cook until thickened, about 5 minutes.
- Remove from the heat and stir in the feta cheese, salt, and pepper. Add the spinach and macaroni and stir until combined.
- Pour the mixture into the prepared baking dish. Sprinkle with the Parmesan cheese. Bake in the preheated oven for 25 minutes, or until golden brown and bubbly.
