Garlic and Herb-Seasoned Pot Roast with Caramelized Onions and Carrots

Ingredients:

  • 2-3 lb chuck roast
  • 2 tablespoons olive oil
  • 2 tablespoons garlic powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large onion, chopped
  • 2 large carrots, chopped
  • 1 cup beef broth
  • 2 tablespoons butter

Directions:

  1. Heat the olive oil in a large pot over medium-high heat. Add the chuck roast to the pot and season with garlic powder, oregano, thyme, salt, and pepper.
  2. Sear the roast on both sides, about 4 minutes per side. Remove the roast from the pot and set aside.
  3. Add the chopped onion and carrots to the pot and cook, stirring often, until the onions are softened and just beginning to turn golden, about 8 minutes.
  4. Add the beef broth to the pot and stir to combine. Return the roast to the pot and bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer, turning the roast every 45 minutes, for 2-3 hours, or until the roast is fork-tender.
  6. Remove the roast from the pot and set aside. Increase the heat to medium-high and bring the liquid to a boil.
  7. Add the butter to the pot and stir until melted. Cook, stirring often, until the liquid has reduced by half and is thick and glossy, about 10 minutes.
  8. Slice the roast and serve with the caramelized onions and carrots. Enjoy!
