Garlic and Herb-Seasoned Pot Roast with Caramelized Onions and Carrots
This delicious pot roast recipe is packed with flavor and is perfect for a cozy night in. It’s made with garlic and herb-seasoned beef, caramelized onions, and carrots for a hearty and flavorful dinner. Serve with roasted potatoes or mashed potatoes for an extra special meal.
Ingredients:
- 2-3 lb chuck roast
- 2 tablespoons olive oil
- 2 tablespoons garlic powder
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 large onion, chopped
- 2 large carrots, chopped
- 1 cup beef broth
- 2 tablespoons butter
Directions:
- Heat the olive oil in a large pot over medium-high heat. Add the chuck roast to the pot and season with garlic powder, oregano, thyme, salt, and pepper.
- Sear the roast on both sides, about 4 minutes per side. Remove the roast from the pot and set aside.
- Add the chopped onion and carrots to the pot and cook, stirring often, until the onions are softened and just beginning to turn golden, about 8 minutes.
- Add the beef broth to the pot and stir to combine. Return the roast to the pot and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer, turning the roast every 45 minutes, for 2-3 hours, or until the roast is fork-tender.
- Remove the roast from the pot and set aside. Increase the heat to medium-high and bring the liquid to a boil.
- Add the butter to the pot and stir until melted. Cook, stirring often, until the liquid has reduced by half and is thick and glossy, about 10 minutes.
- Slice the roast and serve with the caramelized onions and carrots. Enjoy!
