Swap regular flour for gluten-free flour to make a delicious gluten-free version.

Ingredients:

  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 ripe bananas, mashed

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together gluten-free flour, baking soda, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, and vanilla extract. Beat until well combined.
  4. Add mashed bananas to the butter mixture, and mix until well combined.
  5. Add the flour mixture to the banana mixture and stir until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  8. Remove the bread from the oven and let it cool in the pan for 10 minutes before removing it from the pan and transferring it to a wire rack to cool completely.
