Swap regular flour for gluten-free flour to make a delicious gluten-free version.
Ingredients:
- 2 cups gluten-free all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 4 ripe bananas, mashed
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a medium bowl, whisk together gluten-free flour, baking soda, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, and vanilla extract. Beat until well combined.
- Add mashed bananas to the butter mixture, and mix until well combined.
- Add the flour mixture to the banana mixture and stir until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
- Remove the bread from the oven and let it cool in the pan for 10 minutes before removing it from the pan and transferring it to a wire rack to cool completely.
