Gluten-Free Eggplant Parmigiana

This delicious and healthy Gluten-Free Eggplant Parmigiana is a great vegetarian dinner option that is also vegan-friendly. Layers of eggplant, marinara sauce, and vegan cheese, all baked in the oven and topped with fresh parsley. This Italian-inspired dish is sure to be a hit with everyone in the family!

Ingredients:

  • 2 large eggplants, sliced into 1/4 inch rounds
  • 3 cups marinara sauce
  • 1/2 cup vegan parmesan cheese
  • 1/2 cup vegan mozzarella cheese
  • 1/2 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Arrange eggplant slices on a large baking sheet. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.
  3. Bake for 25 minutes, flipping the slices halfway through cooking.
  4. In a 9×13 inch baking dish, spread 1 cup of marinara sauce on the bottom.
  5. Layer half of the eggplant slices over the sauce, followed by another cup of marinara sauce, and then the vegan parmesan and mozzarella cheeses.
  6. Top with remaining eggplant slices, followed by the remaining cup of marinara sauce.
  7. Bake for 30 minutes, until cheese is melted and bubbly.
  8. Garnish with fresh parsley and serve. Enjoy!
