This delicious Lamb Tagine with Apricots is the perfect meal for a cozy night in! The combination of tender lamb, sweet apricots, and savory spices makes for a delicious and flavorful dinner.

Ingredients:

  • 2 tablespoons of olive oil
  • 2 pounds of lamb shoulder, cut into 1-inch cubes
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of ground ginger
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of ground turmeric
  • 1/2 teaspoon of cayenne pepper
  • 1 can of diced tomatoes (14.5 ounces)
  • 1 cup of vegetable broth
  • 1/2 cup of dried apricots, chopped
  • 1/2 cup of golden raisins
  • 1/4 cup of sliced almonds
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)

Directions:

  1. Heat the olive oil in a large Dutch oven or stockpot over medium-high heat. Add the lamb cubes and brown them on all sides. Remove the lamb from the pot and set aside.
  2. Add the onion and garlic to the pot and cook until softened, about 5 minutes. Add the cumin, cinnamon, ginger, smoked paprika, turmeric, and cayenne pepper and cook for 1 minute, stirring constantly.
  3. Add the diced tomatoes, vegetable broth, and lamb cubes to the pot. Stir to combine. Cover the pot and reduce the heat to low. Simmer for 1 hour, stirring occasionally.
  4. Add the apricots, raisins, and almonds to the pot. Stir to combine and cook for 30 minutes, stirring occasionally.
  5. Season the tagine with salt and pepper to taste. Garnish with fresh parsley, if desired.
  6. Serve the tagine over cooked couscous or quinoa.
