Gluten-Free Mushroom Risotto with Wild Mushrooms

Ingredients:

  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cups of wild mushrooms, chopped
  • 1 cup of Arborio rice
  • 3 cups of vegetable broth
  • 1/4 cup of white wine
  • 1/4 cup of freshly grated Parmesan cheese
  • 1/4 cup of fresh parsley, chopped
  • Salt and pepper, to taste

Directions:

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté until the onion is translucent, about 3 minutes.
  2. Add the mushrooms and sauté until the mushrooms are softened, about 5 minutes.
  3. Add the Arborio rice and stir to combine. Cook for 1 minute.
  4. Add the vegetable broth and white wine and stir to combine. Bring to a boil, then reduce the heat to low and simmer until the rice is cooked, about 20 minutes.
  5. Stir in the Parmesan cheese and parsley and season with salt and pepper, to taste.
  6. Continue to cook until the cheese is melted, about 1-2 minutes.
  7. Serve the risotto hot and enjoy!
