Gluten-Free Mushroom Risotto with Wild Mushrooms

Ingredients:
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups of wild mushrooms, chopped
- 1 cup of Arborio rice
- 3 cups of vegetable broth
- 1/4 cup of white wine
- 1/4 cup of freshly grated Parmesan cheese
- 1/4 cup of fresh parsley, chopped
- Salt and pepper, to taste
Directions:
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and sauté until the onion is translucent, about 3 minutes.
- Add the mushrooms and sauté until the mushrooms are softened, about 5 minutes.
- Add the Arborio rice and stir to combine. Cook for 1 minute.
- Add the vegetable broth and white wine and stir to combine. Bring to a boil, then reduce the heat to low and simmer until the rice is cooked, about 20 minutes.
- Stir in the Parmesan cheese and parsley and season with salt and pepper, to taste.
- Continue to cook until the cheese is melted, about 1-2 minutes.
- Serve the risotto hot and enjoy!
