Ingredients:

• 4 veal shanks
• 3 tablespoons of olive oil
• 1 onion, chopped
• 2 cloves garlic, minced
• 2 tablespoons of tomato paste
• 2 cups of white wine
• 2 cups of beef broth
• 2 carrots, chopped
• 2 celery stalks, chopped
• 2 bay leaves
• 2 tablespoons of fresh parsley, chopped
• 2 tablespoons of fresh oregano, chopped
• Salt and pepper to taste
• 2 tablespoons of fresh lemon juice
• 2 tablespoons of fresh chopped parsley for garnish

Directions:

1. Preheat oven to 350 degrees Fahrenheit.
2. Heat olive oil in a large oven-safe pot over medium heat. Add veal shanks and brown for about 3 minutes per side.
3. Remove veal shanks from the pot and set aside.
4. Add onion and garlic to the same pot and cook until soft and fragrant, about 5 minutes.
5. Add tomato paste and cook for 1 minute.
6. Add white wine and bring to a boil.
7. Add beef broth, carrots, celery, bay leaves, parsley, oregano, salt and pepper.
8. Return veal shanks to the pot and bring to a boil. Cover pot with a lid and transfer to the preheated oven. Bake for 1 1/2 hours, or until the veal is tender.
9. Remove pot from the oven and stir in lemon juice.
10. Garnish with fresh parsley and gremolata. Serve and enjoy.
