Gluten-Free Quinoa and Black Bean Stuffed Bell Peppers

Ingredients:

  • 4 bell peppers, cut in half and seeded
  • 1 cup cooked quinoa
  • 1 can black beans, rinsed and drained
  • 1/2 cup diced onion
  • 1/2 cup diced red pepper
  • 1/2 cup corn
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup salsa
  • Shredded cheese, optional
  • Fresh cilantro, optional

Directions:

  1. Preheat oven to 375 degrees F.
  2. Place bell peppers cut-side up on a baking sheet.
  3. In a medium bowl, combine cooked quinoa, black beans, onion, red pepper, corn, chili powder, cumin, garlic powder, salt and black pepper. Stir to combine.
  4. Divide mixture evenly between the bell pepper halves.
  5. Top each bell pepper with a spoonful of salsa.
  6. Bake for 25-30 minutes, or until peppers are tender.
  7. If desired, top with shredded cheese and fresh cilantro before serving. Enjoy!
