Gluten-Free Seafood & Chorizo Paella
A flavorful and healthy paella made with a combination of vegetables, seafood, and chorizo sausage. This gluten-free paella is a perfect meal for any occasion and is sure to satisfy.
Ingredients:
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 bell peppers, diced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup long-grain white rice
- 2 cups vegetable broth
- 1 chorizo sausage, diced
- 1/2 pound peeled and deveined shrimp
- 1/2 pound mussels, scrubbed and debearded
- 1/2 pound calamari, cut into 1/2-inch rings
- 1/4 cup fresh parsley, chopped
- 1 lemon, cut into wedges
Directions:
- Heat the olive oil in a large sauté pan over medium-high heat.
- Add the onion and garlic and cook until softened, about 3 minutes.
- Add the bell peppers, oregano, smoked paprika, turmeric, salt, and pepper and cook for an additional 2 minutes.
- Add the rice and stir to combine. Cook for 1 minute, stirring often.
- Add the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
- Add the chorizo and seafood and cook for an additional 5 minutes, or until the seafood is cooked through.
- Stir in the parsley and remove from heat. Serve with lemon wedges.
