Gluten-Free Seafood & Chorizo Paella

A flavorful and healthy paella made with a combination of vegetables, seafood, and chorizo sausage. This gluten-free paella is a perfect meal for any occasion and is sure to satisfy.

Ingredients:

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 1 chorizo sausage, diced
  • 1/2 pound peeled and deveined shrimp
  • 1/2 pound mussels, scrubbed and debearded
  • 1/2 pound calamari, cut into 1/2-inch rings
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, cut into wedges

Directions:

  1. Heat the olive oil in a large sauté pan over medium-high heat.
  2. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Add the bell peppers, oregano, smoked paprika, turmeric, salt, and pepper and cook for an additional 2 minutes.
  4. Add the rice and stir to combine. Cook for 1 minute, stirring often.
  5. Add the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  6. Add the chorizo and seafood and cook for an additional 5 minutes, or until the seafood is cooked through.
  7. Stir in the parsley and remove from heat. Serve with lemon wedges.
