Gluten-Free Thai Coconut Curry Noodles

This delicious and healthy vegan dish is a perfect combination of creamy coconut curry and flavorful Thai noodles. It’s easy to make and will leave you feeling full and satisfied.

Ingredients:

  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/2 onion, diced
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 1 (14-ounce) can coconut milk
  • 1/4 cup vegetable broth
  • 2 tablespoons soy sauce
  • 1 teaspoon honey
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon ground ginger
  • 2 cups cooked gluten-free noodles
  • 1/2 cup frozen peas, thawed
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh cilantro leaves

Directions:

  1. Heat oil in a large skillet over medium heat.
  2. Add garlic and onion, and cook, stirring frequently, until onion is translucent, about 3-4 minutes.
  3. Stir in curry powder, cumin and turmeric until fragrant, about 1 minute.
  4. Whisk in coconut milk, broth, soy sauce, honey, red pepper flakes and ginger until well combined.
  5. Bring to a simmer; reduce heat and simmer until slightly thickened, about 5-7 minutes.
  6. Stir in noodles and peas until heated through, about 2 minutes.
  7. Season with salt and pepper, to taste.
  8. Serve immediately, garnished with cilantro, if desired.
