This Gluten-Free Tiramisu is made with Almond Flour Ladyfingers and is the perfect way to indulge without compromising your health. This delicious dessert is sure to be a hit with all of your guests.
Ingredients:
-1/4 cup almond flour
-2 tablespoons coconut flour
-2 tablespoons coconut sugar
-1/4 teaspoon baking powder
-2 tablespoons melted coconut oil
-1/4 teaspoon vanilla extract
-3 eggs, separated
-1/4 cup mascarpone cheese
-1/4 cup confectioners sugar
-2/3 cup cold brewed espresso
-1/2 teaspoon unsweetened cocoa powder
Directions:
1. Preheat oven to 350 degrees F.
2. Line a baking sheet with parchment paper.
3. In a medium bowl, whisk together almond flour, coconut flour, coconut sugar, and baking powder.
4. Add the melted coconut oil and vanilla extract to the dry ingredients.
5. In a separate bowl, whisk the egg yolks until light and fluffy.
6. Gently fold the egg yolks into the dry ingredients, mixing until just combined.
7. In a separate bowl, beat the egg whites until stiff peaks form.
8. Gently fold the egg whites into the batter.
9. Using a spoon, drop tablespoon-sized mounds of batter onto the prepared baking sheet.
10. Bake for 10 minutes, or until golden.
11. In a small bowl, whisk together the mascarpone cheese and confectioners sugar.
12. In a separate bowl, mix together the cold brewed espresso and cocoa powder.
13. To assemble the tiramisu, layer the almond flour ladyfingers with the mascarpone cheese mixture and espresso mixture.
14. Refrigerate for at least 1 hour before serving.
