Grilled Avocado and Sun-Dried Tomato Burger

This delicious burger is full of flavor with the combination of grilled avocados, sun-dried tomatoes and your favorite burger toppings. The sun-dried tomatoes add a pop of sweetness and the grilled avocado gives this burger a creamy texture. It’s the perfect healthy alternative for your next burger night!

Ingredients:

  • 2 large avocados, sliced
  • 1/2 cup sun-dried tomatoes, diced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 hamburger buns
  • 4 slices of cheese (optional)
  • Burger toppings of your choice: lettuce, tomatoes, pickles, ketchup, mustard, etc.

Directions:

  1. Preheat a grill or grill pan to medium-high heat.
  2. In a small bowl, combine the diced sun-dried tomatoes and olive oil. Set aside.
  3. Brush the sliced avocados with olive oil and season with salt and pepper.
