Grilled Cabbage Tacos

Ingredients:

  • 1 head of cabbage
  • 2 tbsp. olive oil
  • Salt and pepper to taste
  • 8 small tortillas
  • 1 avocado, sliced
  • 1/2 cup salsa

Instructions:

  1. Preheat grill to medium-high heat.
  2. Remove outer leaves from cabbage and slice it into 8 wedges.
  3. Brush cabbage wedges with olive oil and season with salt and pepper.
  4. Grill cabbage wedges for 3-4 minutes per side, until charred and tender.
  5. Warm tortillas on the grill for 1-2 minutes.
  6. Assemble tacos by placing a grilled cabbage wedge on each tortilla, topped with sliced avocado and salsa.
  7. Serve hot.
