Grilled Chicken Fajitas

Ingredients:

  • 1.5 pounds boneless skinless chicken breasts
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 1 jalapeño, seeded and diced
  • 1/4 cup olive oil
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 flour tortillas
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream

Directions:

  1. In a large bowl combine the olive oil, chili powder, garlic powder, cumin, oregano, salt, and pepper. Add chicken and mix until chicken is well coated.
  2. Heat a grill to medium-high heat. Thread chicken and vegetables onto skewers and grill for about 10 minutes, turning once. Remove from heat and let cool.
  3. Heat tortillas according to package instructions. Divide chicken and vegetables evenly among the tortillas.
  4. Top with cheese, cilantro, and sour cream. Serve warm.
