Grilled Peach Salad with Goat Cheese
This delicious and healthy Grilled Peach Salad with Goat Cheese is a perfect summer salad. Ingredients:
- 4 ripe peaches, halved and pitted
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 4 cups mixed greens
- 3 ounces goat cheese, crumbled
- 1/4 cup toasted almonds, roughly chopped
Directions:
- Heat the grill to medium heat.
- Brush the peaches with the olive oil and place them on the grill.
- Cook the peaches for about 4 minutes per side, or until they are lightly charred and softened.
- Remove the peaches from the grill and let cool. Cut them into wedges.
- In a large bowl, mix together the balsamic vinegar, salt and pepper.
