Grilled Peach Salad with Goat Cheese

This delicious and healthy Grilled Peach Salad with Goat Cheese is a perfect summer salad. Ingredients:

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 cups mixed greens
  • 3 ounces goat cheese, crumbled
  • 1/4 cup toasted almonds, roughly chopped

Directions:

  1. Heat the grill to medium heat.
  2. Brush the peaches with the olive oil and place them on the grill.
  3. Cook the peaches for about 4 minutes per side, or until they are lightly charred and softened.
  4. Remove the peaches from the grill and let cool. Cut them into wedges.
  5. In a large bowl, mix together the balsamic vinegar, salt and pepper.
  6. Add the mixed greens to the bowl and toss to combine.
  7. Add the grilled peaches, goat cheese and almonds and toss to combine.
  8. Serve the salad immediately.
