Grilled Polenta with Ratatouille

Ingredients:

  • 2 cups polenta
  • 4 cups vegetable broth
  • 1 eggplant, diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced

  • Salt and pepper to taste

Directions:

  1. In a medium saucepan, bring the vegetable broth to a boil. Slowly add the polenta, stirring constantly to prevent lumps. Reduce heat to low and cook for 10 minutes, stirring frequently.

  3. Preheat an outdoor grill to medium-high heat. Grease the grates with oil.
  4. Once the polenta is finished cooking, pour it onto the preheated grill. Use a spatula to flatten the polenta into an even layer. Grill for 5 minutes per side.
