Ingredients:

  • 1 lb salmon fillet
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 lb green beans, trimmed
  • 2 medium tomatoes, diced
  • 2 hard boiled eggs, peeled and sliced
  • 1/4 cup capers
  • 1/4 cup fresh parsley, chopped

Directions:

  1. Preheat grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, mustard, garlic powder, salt, and pepper.
