Grilled Sweet Potato and Avocado Salad with Lemon Vinaigrette
This fresh and zesty salad is sure to become a summer favorite! The grilled sweet potatoes and creamy avocado are paired with fresh greens and a bright lemon vinaigrette for a light and flavorful meal.
Ingredients:
- 2 sweet potatoes, cut into 1/2-inch thick slices
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 avocados, peeled and cut into cubes
- 4 cups mixed greens
- 1/4 cup diced red onion
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- For the vinaigrette:
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Directions:
- Preheat a grill or grill pan over medium-high heat.
