Ingredients:
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 zucchini, cut into 1-inch pieces
- 1 yellow squash, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 2 tablespoons olive oil
- Salt and pepper to taste
- ½ cup crumbled goat cheese
- 3 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- 2 tablespoons olive oil
Directions:
- Preheat your grill to medium-high heat.
- Place the bell peppers, zucchini, yellow squash, and red onion on a large baking sheet. Drizzle with olive oil and season with salt and pepper.
