Hearty Duck and Lentil Stew Recipe
This delicious Hearty Duck and Lentil Stew is the perfect meal for a cozy night in. Ingredients:
- 1 ½ pounds of duck legs
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 teaspoons dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 4 cups chicken broth
- 1 cup dry lentils
- 1 cup diced tomatoes
- Salt and pepper to taste
Directions:
- Heat the olive oil in a large pot over medium heat. Once the oil is hot, add the duck legs and cook until they are golden brown, about 5 minutes per side. Transfer the duck to a plate and set aside.
- Add the onion, garlic, carrots, and celery to the pot. Cook until the vegetables are softened, about 5 minutes. Add the thyme, oregano, and rosemary and cook for an additional 1 minute.
- Pour in the chicken broth and bring to a boil. Add the lentils and reduce to a simmer. Cook for 20 minutes or until the lentils are tender.
- Return the duck legs to the pot and add the diced tomatoes. Simmer for an additional 15 minutes.
- Season with salt and pepper to taste. Serve warm in bowls.
- Garnish with fresh herbs and lemon wedges, if desired.
