Hearty Ratatouille and Sausage Stew

Ingredients:
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 bell pepper, chopped
- 2 cups diced zucchini
- 1 (14.5 ounce) can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup tomato paste
- 1 cup vegetable or chicken broth
- 1 pound Italian sausage, cut into 1/2-inch slices
- 1/4 cup chopped fresh parsley leaves, for serving
Directions:
- Heat the olive oil in a large pot over medium-high heat. Add the garlic, onion, bell pepper, and zucchini and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Add the diced tomatoes, oregano, basil, salt, black pepper, and red pepper flakes and stir to combine. Add the tomato paste and broth and stir to combine.
- Add the sausage and stir to combine. Bring the mixture to a boil, reduce the heat to low, and simmer, stirring occasionally, for 20 minutes.
- Remove the pot from the heat and let cool for 5 minutes. Serve the stew topped with the chopped fresh parsley leaves.
