Hearty Venison and Wild Rice Soup

Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound venison, cubed
- 1 cup wild rice
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1/4 cup chopped fresh parsley
- 1 cup frozen peas
Directions:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the venison and cook until browned, about 5 minutes.
- Add the wild rice, vegetable broth, thyme, rosemary, black pepper, and salt. Bring to a boil, then reduce heat to low and simmer for 40 minutes.
- Stir in the parsley and frozen peas. Simmer for an additional 10 minutes.
