Homemade Chicken Noodle Soup

Nothing beats a warm, comforting bowl of homemade chicken noodle soup on a cold winter night. This easy and delicious recipe is sure to become a family favorite. All you need is a few simple ingredients and you can have a delicious and healthy meal in no time.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cups cooked and shredded chicken
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 1 bay leaf
  • 2 cups uncooked egg noodles

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery and sauté until the vegetables are softened, about 5 minutes.
  2. Add the chicken, broth, thyme, oregano, black pepper, salt, red pepper flakes, and bay leaf and bring to a boil. Reduce the heat and simmer for 10 minutes.
  3. Add the egg noodles and cook until noodles are tender, about 10 minutes.
  4. Remove the bay leaf and discard. Taste and adjust seasonings if needed.
  5. Ladle the soup into bowls and serve.
  6. Serve the soup with crusty bread or crackers, if desired.
