Recipe: Homemade Cream Puffs

Ingredients:

  • 1 cup of water
  • 1/2 cup of butter
  • 1 cup of all-purpose flour
  • 4 eggs
  • 1/3 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of salt
  • 1/2 cup of whole milk
  • 3 tablespoons of cornstarch
  • 1/4 cup of heavy cream

Directions:

  1. Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  2. In a medium saucepan, bring the water and butter to a boil. Once boiling, add the flour and stir until a dough forms and the mixture pulls away from the sides of the pan.
  3. Remove from heat and transfer the mixture to a large bowl. Whisk in the eggs, one at a time, until the dough is smooth and glossy. Add the sugar, vanilla, and salt and whisk until combined.
  4. Using a spoon, scoop the dough into small balls onto the prepared baking sheet. Bake for 25 minutes, or until golden brown and puffed up.
  5. Meanwhile, in a medium saucepan, combine the milk, cornstarch, and cream. Cook over medium heat, whisking constantly, until the mixture thickens. Remove from heat and let cool.
  6. Once the cream puffs have cooled, use a sharp knife to cut off the tops and set aside. Fill the puffs with the cream mixture, then place the tops back on. Serve warm or chilled.
