Honey-Glazed Banana Nut Bread with Pecans

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 ripe bananas, mashed
  • 1/2 cup butter, melted
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 3 tablespoons honey

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9×5 inch loaf pan.
  2. In a medium bowl, mix together flour, baking powder, baking soda and salt.
  3. In a large bowl, mix together the mashed bananas, melted butter, brown sugar, eggs and vanilla extract.
  4. Stir the dry ingredients into the wet ingredients until just combined. Fold in the chopped pecans.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 55 to 60 minutes, until a toothpick inserted into the center of the loaf comes out clean.
  7. Mix together the honey and 2 tablespoons water. Brush the honey glaze over the top of the bread. Let cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
