For the cake:
- 2 cups of all-purpose flour
- 2 teaspoons of baking powder
- 1 teaspoon of salt
- 1 cup of sugar
- 1 cup of unsalted butter (at room temperature)
- 3 large eggs
- Zest of 3 lemons
- 1 tablespoon of matcha powder
For the lemon drizzle:
- 1 cup of sugar
- 1/2 cup of lemon juice
For the thyme infusion:
- 1 cup of sugar
- 1 cup of water
- 4-5 sprigs of fresh thyme
Instructions
1. Preheat the oven to 180°C (350°F) and grease a loaf pan.
2. In a medium bowl, mix together the flour, baking powder, salt and matcha powder.
3. In a large bowl, beat the butter and sugar until well combined and fluffy.
4. Add the eggs, one at a time, to the butter and sugar mixture, making sure to mix well after each addition.
5. Add into the mixture the lemon zest and then the matcha flour mixture. Stir until all the ingredients are fully combined.
6. Pour the batter into the greased loaf pan and bake for approximately 50 minutes, or until a toothpick inserted into the middle of the cake comes out clean.
7. While the cake is baking, prepare the lemon drizzle by dissolving the sugar in the lemon juice over low heat. Set it aside.
8. Also, prepare the thyme infusion by combining the sugar, water, and thyme leaves in a saucepan and simmering it over low heat. Once ready, remove the thyme sprigs and set the syrup aside.
9. Once the cake is done and still hot, puncture it using a skewer and drizzle both the lemon syrup and thyme infusion so that both are well absorbed.
10. Let the cake cool completely before slicing and serving. Enjoy the zesty, aromatic flavors of this unique cake!
