Ingredients:

  • 1 pound ground beef
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced red onion
  • 1/4 cup diced pickles
  • Sugar-free salad dressing (such as ranch or thousand island), to taste

Instructions:

  1. Heat a skillet over medium heat. Add the ground beef and cook until browned and cooked through. Season with salt and pepper to taste.
  2. Remove the cooked ground beef from the skillet and set aside to cool slightly.
  3. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, shredded cheddar cheese, diced red onion, and diced pickles.
  4. Add the cooked ground beef to the salad bowl and toss to combine.
  5. Drizzle the salad with your desired amount of sugar-free salad dressing and toss again to coat evenly.
  6. Taste and adjust the seasonings if needed.
