Lemon Apple Drizzle Cake Recipe

Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- 2 tablespoons lemon juice
- 1/2 teaspoon lemon zest
- 1 cup peeled and diced Granny Smith apples
- 1/4 cup granulated sugar
- 1/4 cup lemon juice
Directions:
- Preheat oven to 350°F. Grease an 8-inch round cake pan and set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter and 1 cup of granulated sugar until light and fluffy. Beat in the eggs, one at a time, until fully incorporated. Beat in the vanilla extract.
- Add half of the flour mixture to the butter mixture and beat until combined. Beat in the milk and lemon juice until combined. Beat in the remaining flour mixture until fully combined. Gently fold in the lemon zest and diced apples.
- Pour the batter into the greased cake pan and spread into an even layer. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Meanwhile, make the lemon drizzle. In a small saucepan, combine 1/4 cup of granulated sugar and 1/4 cup of lemon juice. Cook over medium heat until the sugar is completely dissolved. Set aside.
- When the cake is finished baking, remove it from the oven and pour the lemon drizzle over the top of the cake. Let the cake cool completely before serving.
