Ingredients:
- 2 cups all-purpose flour
- 1/2 cup wheat bran
- 2 tsp baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup white sugar
- 1/2 cup butter, melted
- 2 eggs
- 1/2 cup milk
- 1 teaspoon lemon zest
- 1/4 cup lemon juice
- 1/4 cup confectioners’ sugar
Directions:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, wheat bran, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the sugar and butter. Beat in the eggs one at a time. Beat in the milk, lemon zest, and lemon juice. Gradually add the flour mixture, beating until just combined.
- Pour the batter into the prepared pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
- In a medium bowl, whisk together the confectioners’ sugar and 2 tablespoons of lemon juice until smooth. Drizzle the glaze over the cooled cake.
