Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup wheat bran
  • 2 tsp baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup white sugar
  • 1/2 cup butter, melted
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon lemon zest
  • 1/4 cup lemon juice
  • 1/4 cup confectioners’ sugar

Directions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, wheat bran, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the sugar and butter. Beat in the eggs one at a time. Beat in the milk, lemon zest, and lemon juice. Gradually add the flour mixture, beating until just combined.
  4. Pour the batter into the prepared pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Allow the cake to cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
  6. In a medium bowl, whisk together the confectioners’ sugar and 2 tablespoons of lemon juice until smooth. Drizzle the glaze over the cooled cake.
