Lemon Chai Drizzle Cake Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 3 tablespoons freshly squeezed lemon juice
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground chai
  • 1/2 cup buttermilk
  • 1/2 cup powdered sugar
  • 2 tablespoons freshly squeezed lemon juice

Directions:

  1. Preheat the oven to 350°F. Grease and flour an 8-inch round cake pan and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the butter and sugars with an electric mixer until light and fluffy, about 3 minutes. Add the eggs, one at a time, mixing well after each addition. Mix in the lemon juice, vanilla extract, and ground chai.
  4. Add the flour mixture alternately with the buttermilk, beginning and ending with the flour mixture. Pour the batter into the prepared pan.
  5. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  6. In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Drizzle over the cooled cake.
